Cold Soba and Shrimp Salad with Ponzu Vinaigrette

Cold Soba and Shrimp Salad with Ponzu Vinaigrette Recipe

  • ¼ c. organic carrots, matchstick cut
  • 8 tsp. organic toasted sesame oil
  • 3 oz. organic shiitake mushroom caps, thinly sliced
  • ⅓ c. sliced organic red onion
  • 1 c. organic green beans, cut into 2-inch pieces
  • ½ pounds wild shrimp, peeled and deveined
  • 2 tsp. organic black sesame seeds
  • 6 oz. Eden Foods Buckwheat Soba Noodles
  • 4 Tbsp. Eden Foods Ponzu Sauce
  1. Heat a medium safe nonstick skillet over medium-high heat. Coat pan with cooking spray.
  2. Add shrimp; sauté 5 minutes or until tails curl and shrimp are pink. Remove from heat.
  3. Cook noodles according to package instructions. Drain; rinse under cold water. Drain well.
  4. Combine noodles, green beans, mushrooms, onion, carrots, and shrimp in a large bowl.
  5. Combine ponzu and oil in a small bowl, stirring with a whisk.
  6. Add oil mixture to noodle mixture; toss gently to coat noodles. Add sesame seeds, tossing gently to combine.
  7. Cover and chill 30 minutes.
  8. Serve.
