  • 10 Tbsp. Wholesome Sweeteners Organic Zero
  • 2 whole (2" diam) organic beets, cooked and peeled
  • 4 large pasture raised eggs
  • ½ tsp. SweetLeaf® Stevia Extract
  • 4 oz. organic unsweetened baking chocolate
  • 1 Tbsp. organic natural cocoa powder
  • 1 tsp. organic vanilla extract
  • ½ tsp. Celtic sea salt
  • 1 tsp. non-aluminum baking powder
  • 1 ½ cup. ground organic almond flour
  • 4 Tbsp. Olivado Macadamia Nut Oil
  1. Preheat the oven to 350 degrees F.
  2. Puree the beets and cocoa powder in a food processor until very smooth.
  3. Melt chocolate slowly over low heat or in a double boiler.
  4. Combine the oil, erythritol, stevia and eggs in a large bowl and mix well with an electric mixer for about 2 minutes.
  5. Mix in the beet puree, vanilla and chocolate.
  6. Whisk almond flour and baking powder in a separate bowl. Add to the beet mixture.
  7. Pour batter into a well-greased Bundt pan or 9” cake pan.
  8. Bake for 40- 55 minutes or until a knife inserted in the middle comes out clean.
