Ingredients
  • 2 oz. organic feta cheese, cubed
  • 2 tsp. organic extra virgin olive oil
  • 1 Tbsp. fresh mint, chopped
  • 2 Tbsp. organic lemon juice
  • ¼ c. chopped organic red onion
  • 1 c. organic chickpeas, drained and rinsed well
  • 1 medium organic tomato, seeded and roughly chopped
  • 1 c. heart of palm, drained
Instructions
  1. Combine the lemon juice and olive oil. Set aside. Slice the heart of palm into ½ inch thick slices. Add heart of palm, chickpeas, tomato, feta cheese, onion and mint to a medium bowl. Drizzle dressing over salad and toss well to combine.
