  • 16 small organic Kalamata olives
  • 1 Tbsp. organic extra virgin olive oil
  • 2 Tbsp. organic capers, drained
  • 1 28-oz can organic diced tomatoes with juice
  • 3 cloves organic garlic, finely chopped
  • 2 -8oz. breasts organic chicken, trimmed
  1. Preheat oven to 350 F. Season chicken breasts with salt and pepper (optional). In a medium skillet that has a lid, add olive oil and heat over medium-high heat. Don’t let oil smoke. Add chicken breasts, seasoned side down into pan with olive oil. Cook 3 minutes on each side. Turn heat to low. Add garlic cloves and stir to heat through. Pour in the tomatoes, olives and capers. Transfer pan to oven and cook until chicken is no longer pink in the center and juices run clear (about 25 minutes).
