  • 2 Tbsp. organic light sour cream
  • 4 tsp. organic espresso powder
  • 1 tsp. organic vanilla extract
  • 24 packets Truvia: Nature's Calorie-Free Sweetener
  • 1 ½ c. canned organic black beans, drained and rinsed
  • ½ c. organic cocoa powder
  • 2 large organic, omega-3 eggs
  • 1 Tbsp. organic, grass-fed butter, melted
  1. Preheat oven to 350 degrees F.
  2. Spray 8x8 glass baking dish with nonstick spray.
  3. Combine beans, cocoa, coffee, eggs in food processor for 2 minutes.
  4. Add remaining ingredients and process until smooth, about 1 minute.
  5. Pour into baking dish. Bake 28-30 minutes, turning the dish halfway through. Toothpick inserted will have soft batter clinging to it.
  6. Let cool in baking dish on wire rack. Cut into 12 squares.
