  • 2 Tbsp. organic lemon juice
  • 4 oz. organic gorgonzola cheese
  • 2 oz. organic walnuts (about 28 halves)
  • 4 heads organic Belgian endive (Witloof chicory)
  • 2 small rganic Gala apples
  1. Separate endive leaves and place on a serving plate. You can use 16 leaves, and each serving will be 2 leaves. Core and chop apples into 1 inch pieces. Place in a bowl and coat with lemon juice to prevent browning. Divide apples evenly and place inside endive leaves. Top with gorgonzola and walnuts. Serve.
