  • 1 Tbsp. organic extra virgin olive oil
  • ⅓ medium organic red onion, thinly sliced
  • ¼ tsp. dried oregano
  • 6 c. fresh organic baby spinach
  • ⅓ c. plain organic Greek yogurt
  • ¼ tsp. Celtic sea salt
  • 1 Tbsp. organic apple cider vinegar
  • ¼ tsp. freshly ground black pepper
  • ½ tsp. dried basil
  1. In a small bowl, whisk together the yogurt, oil, vinegar, salt, black pepper, basil and oregano.
  2. Refrigerate dressing until ready to serve.
  3. Place the spinach in a large salad bowl.
  4. Top with onion.
  5. Drizzle the dressing over the salad.
  6. Serve.
