  • ½ medium organic red onion, finely chopped
  • 8 c. Earthbound Farm Baby Spinach
  • 1 Tbsp. organic balsamic vinegar
  • 1 Tbsp. organic extra virgin olive oil
  • 1 c. Eden Foods Organic Garbanzo Beans (Chick Peas)
  • ¼ tsp. Celtic sea salt
  1. Combine chopped spinach, chickpeas and chopped onions in a bowl. 'Add one tablespoon balsamic vinegar and three tablespoons EVOO (about three turns of the bowl in a slow stream).
  2. Toss well to coat and combine.
  3. Season with salt and pepper.
  4. Serve.
