Asparagus with Feta & Lemon Vinaigrette

Asparagus with Feta & Lemon Vinaigrette Recipe

  • 2 oz firm organic feta cheese, cut into 1" cubes
  • 2 cloves organic garlic, minced
  • 30 spears small organic asparagus
  • ½ c. organic lemon juice
  • 1 c. spring water
  • 2 Tbsp. organic extra virgin olive oil
  1. Trim ends of asparagus.
  2. Whisk half of the lemon juice with the extra virgin olive oil and add the minced garlic.
  3. Heat a non-stick skillet over medium high heat.
  4. Add spring water and remaining lemon juice.
  5. Layer asparagus in a single layer in pan and cover with a tight fitting lid.
  6. Steam for up to 5 minutes, gently moving pan to rotate spears. Cook just until spears turn bright green to retain nutrients and flavor and promptly remove from heat.
  7. Remove spears from lemon water and place on serving dish.
  8. Top with feta cheese and drizzle with lemon vinaigrette.
