  • 2 Tbsp. organic tamari (gluten free soy sauce)
  • 1 c. organic white wine
  • 2 oz. canned water chestnuts
  • 2 tsp. organic toasted sesame oil
  • 24 oz. wild salmon
  • 2 tsp. organic fresh ginger, minced
  • 2 medium organic scallions, thinly sliced

  1. First, poach the salmon. Bring one cup of white wine and ½ cup of water to a boil in a large skillet. Reduce the heat, add the salmon, cover, and simmer for about 6-8 minutes, or until the salmon flakes easily.
  2. When salmon cools, remove and discard the skin, and flake fish into 1 inch pieces.
  3. In a medium bowl, gently toss the salmon with the soy sauce, sesame oil, ginger, scallions and water chestnuts.
  4. Spoon the salmon into lettuce cups.
  5. Serve.
