Asian Rotisserie Chicken Salad Recipe

  • 2 c. fresh cilantro
  • 0.125 tsp. Celtic sea salt
  • 1 tsp. red bell pepper, thinly sliced
  • ¼ c. fresh organic lime juice
  • ½ tsp. freshly ground pepper
  • 1 medium organic scallions, thinly sliced
  • 1 head organic romaine lettuce, torn into bite-size piece
  • ¼ head medium organic red cabbage, cored and thinly sliced
  • 4 Tbsp. organic almond oil
  • 24 oz. organic rotisserie chicken (meat only)
  • 2 oz. organic cashews, halved
  1. First, make dressing. In a blender or Magic Bullet, combine cilantro, lime juice, and oil; season half the with salt and pepper. Blend until smooth.
  2. In a large bowl, combine chicken, cabbage, bell pepper, and scallions; season with remaining salt and pepper.
  3. In another large bowl, toss lettuce with some of the dressing to coat.
  4. Divide among serving bowls, and top with chicken mixture. Drizzle with remaining dressing, and sprinkle with cashews.
  5. Serve.
