Lentil and Mushroom Soup (Vegan) Recipe

Ingredients
  • 2 c. chopped organic onion
  • 2 cloves organic garlic, minced
  • 2 c. organic lentils, rinsed
  • 2 c. organic carrots, diced
  • 1 Tbsp. organic red wine vinegar
  • 1 c. organic celery, diced
  • ½ tsp. crushed red pepper
  • ½ c. organic parsley
  • 2 c. organic crimini mushrooms, sliced
  • 1 medium organic tomato, seeded and diced
  • ¼ c. Imagine Organic Low Sodium Vegetable Broth
  • 6 c. filtered or spring water
  • 1 whole bay leaf
Instructions
  1. Heat broth in saucepan. Add onions, sauté 10 minutes.
  2. Add garlic, water, lentils, carrots, mushrooms, celery, bay leaf, rosemary, crushed red pepper, and bring to a boil.
  3. Reduce heat to medium. Simmer 30 minutes.
  4. Discard bay leaf. Add tomatoes and vinegar, simmer 5 minutes.
  5. Sprinkle with parsley and serve.
