Lemon Chicken Salad with Tarragon Recipe

  • ½ tsp. freshly ground black pepper
  • ½ tsp. Celtic sea salt
  • ½ whole organic lemon
  • 2 stalks organic celery, chopped
  • 1 Tbsp. fresh tarragon leaves
  • 2 -8oz. breasts pasture-raised chicken
  • 4 Tbsp. Wilderness Family Naturals Mayonnaise Wilderness Family Naturals Coconut Mayonnaise
  • 2 Tbsp. chopped minced shallot
  • 1 ½ tsp. organic Dijon mustard
  1. First, poach the chicken. In a large, 2 quart heavy saucepan, bring 2 inches of filtered water to a boil. Add chicken and poach at a bare simmer, partially covered, until just cooked through, 12 to 14 minutes.
  2. Shred cooled chicken with a fork.
  3. In a large bowl, whisk together the mayonnaise, shallot, mustard, lemon juice plus ½ tsp zest, salt and pepper. Stir in the chicken and celery.
  4. Sprinkle with fresh tarragon leaves.
  5. Serve.
