Chilled Avocado Soup (Vegetarian) Recipe

  • ½ medium organic onion, chopped
  • ½ tsp. cayenne pepper
  • 2 medium organic avocados, mashed
  • ½ medium organic cucumber, diced
  • 1 lemon, zest and juice
  • 1 c. organic buttermilk
  • 2 c. Imagine Organic Low Sodium Vegetable Broth
  1. Combine avocados, cucumbers, onion, lemon juice ,lemon zest and buttermilk in a blender, food processor or Vitamix. Puree.
  2. Add broth, one cup at a time, until creamy.
  3. Season with salt and pepper.
  4. Spoon into bowls, sprinkle with cayenne.
  5. Serve.
