Zucchini-Carrot Cake

This Recipe:

Preparation

  1. Preheat oven to 350 degrees F.
  2. In a food processor with the S blade in place, pulse hazelnuts to a mealy consistency. Set aside.
  3. In a large mixing bowl, whisk the eggs until frothy. Add the oil,yogurt, erythritol, stevia, ground hazelnuts, protein powder, baking soda, salt, cinnamon, and nutmeg. Mix well.
  4. Stir in the carrots and zucchini and mix well.
  5. Thoroughly coat a ring mold or bundt pan with non-stick cooking spray. Pour batter into pan.
  6. Bake for 45 minutes.
  7. Cool on a wire rack and serve.
