Spinach Salad with Roasted Beets & Goat Cheese

This Recipe:

Preparation

  1. Slice beets into 1" slices. Sprinkle with salt.
  2. Cook beets. OVEN METHOD: Preheat oven to 375 F. Oil a baking sheet and place sliced beets on baking sheet in a single layer. Roast 25 minutes or until beets are tender. FLAVORWAVE METHOD: Place beets on top rack and cook for 15-20 minutes at 350 F.
  3. Meanwhile, prepare dressing by mixing remaining oil with vinegar, lemon juice and basil.
  4. Arrange baby spinach on plates or serving dish.
  5. Top with beets and goat cheese (about 1 ounce/serving).
  6. Drizzle with dressing and serve.
