Spicy Turkey Meatloaf

This Recipe:

Preparation

  1. Preheat oven to 375 degrees F.
  2. Toast bread and use a Magic Bullet or food processor and process to crumbs.
  3. In a large bowl, using a fork, mix together breadcrumbs, egg whites, and tomatoes. Blend in turkey, chili powder, oregano, garlic, sea salt, and pepper. Mix in spinach.
  4. Gently pack mixture into a 9 x 5-inch loaf pan that has been lightly coated with cooking oil spray. Top with ketchup, spreading to coat.
  5. Bake uncovered for 45 minutes or until juices run clear when meat loaf is pierced with a knife, or internal temperature registers 165 degrees F.
  6. Remove from oven. Let cool 15 minutes, then serve.
