Preparation

Add almonds, walnuts and salt to a food processor or Magic Bullet. Process until coarsely chopped. Add the dates and vanilla bean and process just until mixture begins to stick together. Add the cacoa nibs and pulse quickly just to mix. Scoop 1 Tbsp. of the mixture and roll into a 1 inch ball. Roll in almond flour and flatten to make a cookie. Place in an airtight storage container and chill 2 hours. Serve.
