Raw Cashew Coconut Cookies

Reminiscent of "thumbprint" cookies, these raw treats are packed with omega-3 fatty acids and living-food enzymes for a wholesome low glycemic dessert.

This Recipe:

Preparation

  1. Place cashews in a glass container, cover with filtered/spring water and cover with a lid.
  2. Place in the refrigerator and soak overnight.
  3. Drain and rinse.
  4. Place cashews, raisins, flaxseeds and pumpkin seeds in a food processor or Magic Bullet (preferred).
  5. Grind until the mixture forms a dough-like consistency.
  6. Remove mixture from processor and form into 1-inch balls.
  7. Dredge in coconut and flatten to form a cookie.
  8. Store in a glass container in the refrigerator.
