This Recipe:

Preparation

  1. Coat a safe, nonstick pan with organic high heat cooking spray.
  2. Heat over medium heat.
  3. Add the mushrooms, onion, and bell pepper.
  4. Cook 3-4 minutes.
  5. While the veggies cook, whisk the eggs in a small bowl until frothy.
  6. Pour the egg mixture into the skillet.
  7. Cook, stirring, 3-4 minutes or until eggs are firm.
  8. Toast pita, slice in half, fill with eggs, top with avocado and freshly ground black pepper.
  9. Serve.
