Poached Salmon Spinach Salad

This Recipe:

Preparation

  1. To poach the salmon, bring about one cup of white wine and 1/2 cup of water to a boil in a large skillet. Reduce the heat, add the salmon, cover, and simmer for about 6-8 minutes, or until the salmon flakes easily.
  2. In a skillet, heat half of the oil over medium heat.
  3. When hot, sauté the spinach for 1 1/2 minutes. Add the salt and pepper and divide the spinach among plates.
  4. Heat the remaining tablespoon of oil in the skillet. Sauté the onion and tomatoes over medium heat until the onion is tender, about 5–6 minutes.
  5. Arrange the salmon on the spinach and top with the tomatoes and onion.
  6. Garnish with parsley and serve.
