Pistachio Biscotti

This Recipe:

Preparation

  1. Add butter and erythritol to a medium bowl. Using an electric mixer, cream until light and fluffy.
  2. Add eggs, one at a time, and blend until smooth.
  3. Add vanilla, flour, baking powder and salt. Mix until just blended.
  4. Stir in pistachios.
  5. Preheat oven to 325 degrees F.
  6. Divide dough in half. On a lightly floured surface, knead dough and shape into two oblong logs about 12 inches long and 2 inches wide.
  7. Place on a lightly oiled baking sheet and bake until just light golden. Remove from oven and let cool 10 minutes.
  8. Slice logs on the diagonal about 1/2 inch thick. Place slices on baking sheet and bake again for 20 minutes, turning over once.
