Bob's Red Mill Gluten Free Rolled Oats
2 Tbsp
Bob’s Red Mill Organic Coconut Flour
4 Tbsp(s)
unsweetened shredded coconut
1/3 cup(s)
honey
1/2 tsp(s)
sea salt
1 large
organic egg
4 Tbsp(s)
organic coconut oil
1/2 tsp(s)
ground nutmeg
1 tsp
organic vanilla extract

Preparation
Preheat oven to 350 degrees F.
Grease cookie sheets or line with unbleached parchment paper and set aside.
Combine oats, coconut, coconut flour, nutmeg and salt.
Combine oil, honey, egg and vanilla.
Mix wet and dry ingredients together. Set aside for 15 minutes to let oats soften and bind.
If the mixture is dry add water, one tablespoon at a time.
Drop from a teaspoon in rounds, about an inch apart, onto prepared baking sheets and bake for 8 to 10 minutes or until browned.
Remove from oven and allow cookies to become firm for 2 minutes before removing to a wire rack to finish cooling.
