This Recipe:

Preparation

  1. In a medium bowl, add the eggs and beat with a fork.
  2. Heat a medium safe non-stick pan over medium heat. Add the oil and swirl to coat.
  3. Add the eggs and cook, stirring, about 2 minutes.
  4. Add the salsa, peppers and cheese and cook another 2-3 minutes or until eggs are opaque and cheese is melted.
  5. Slice the tortilla in half.
  6. Spoon egg mixture into tortilla, fold over and serve.
