This Recipe:

Preparation

  1. Remove skin and bones from halibut; cut into bite-sized pieces.
  2. Saute vegetables over medium heat in 1 tablespoon butter.
  3. Add halibut, chicken broth, salt and pepper.
  4. Simmer, covered for 5 minutes.
  5. Add milk and heat gently.
  6. Combine remaining butter with arrowroot and add to chowder.
  7. Cook and stir until slightly thickened.
  8. Add cheese; cook and stir over low heat until cheese melts.
  9. Sprinkle with parsley and serve.
