Grilled Veggie Tostadas with Salsa

This Recipe:

Preparation

  1. Preheat the grill to medium-high, or preheat broiler to high.
  2. Mix the olive oil, garlic, chili powder and salt in a large shallow bowl.
  3. Add the zucchini, yellow squash, bell pepper, eggplant and onion to the bowl. Using your hands, rub the seasonings into the vegetables.
  4. Grill or broil the vegetables in batches until lightly charred, about 4 minutes per side, or until the vegetables are tender.
  5. Slice tortillas in half and warm.
  6. Place 1/2 tortilla on each plate. Distribute the vegetables equally over the tortillas, top with salsa, and sliced avocado.
