Greek Frittata with Spinach, Feta & Olives

A simple egg dish elevated with the fresh flavors of Greece

This Recipe:

Preparation

  1. Heat oven to 425°F.
  2. Coat individual baking dishes (one per serving) with cooking spray. Set aside.
  3. Heat oil in a large pan over medium heat.
  4. Add shallot and cook until soft but not brown, 2 to 3 minutes. Add spinach. Cook 2 to 3 more minutes. Remove from heat.
  5. Lightly whisk eggs and egg whites in a bowl.
  6. Chop oregano, mix with feta cheese and add to eggs.
  7. Spoon into baking dishes, top with sun-dried tomato pieces and kalamata olives.
  8. Bake until firm in the center, 12 to 14 minutes.
