Love the light, airy texture of angel food cake? Then this dessert is for you! Unlike most "angel food cakes", this one is loaded with beta-carotene rich carrots and protein-packed eggs, almonds and whey protein. With its fluffy, tall appearance and golden brown finish, this devilishly delicious dessert is unbelievably angelic.

This Recipe:

Preparation

  1. Preheat oven to 350 degrees F.
  2. Grease a deep 9" round pan.
  3. Beat egg yolks with lemon zest, erythritol and stevia in a small bowl with an electric mixer until thick. Transfer to large bowl.
  4. Stir in carrot, almond flour, whey powder and baking powder.
  5. Beat egg whites with a clean mixer and bowl until soft peaks form. Fold beaten egg whites gently into carrot mixture.
  6. Pour mixture into prepared pan, bake for 45 minutes to 1 hour or until a toothpick inserted into the center comes out clean.
  7. Top with Cream Cheese Frosting (if desired) and serve.
