French Toast with Blueberries, Coconut & Almonds

This Recipe:

Preparation

  1. Thaw Ezekiel bread and lightly toast.
  2. Beat eggs and mix with cinnamon in a shallow dish.
  3. Heat a large skillet over medium-high heat with the coconut oil.
  4. Meanwhile, make the sauce and the topping.
  5. Add the frozen blueberries to a small saucepan with the agave over low heat. Stir occasionally.
  6. Make the topping - mix the shredded coconut with the slivered almonds in a small ramekin. Set aside until ready to serve.
  7.  Now, make the French toast. Dip each slice of bread into the egg mixture on both sides, then place in oiled pan. Repeat with all slices.
  8. Cook until golden brown (about 2 minutes), then flip.
  9. Place French toast on serving plates, top with blueberry sauce, sprinkle with coconut-almond topping and serve.

Morning! Yummy breakfast, wholesome, flavorful and easy. Modified it a bit: Used maple syrup instead of agave. Used peacans instead of almonds and whirled in up in my mini processor. InJoy!
