Baked Eggplant Parmesan (Gluten Free)

This Recipe:

Preparation

  1. Preheat oven to 400°F.
  2. Toast Ezekiel bread and grind into crumbs using a blender or Magic Bullet. Set aside.
  3. Oil a baking sheet. Place sliced eggplant on sheet in a single layer and sprinkle with salt and pepper. Bake 10-12 minutes. Remove from oven and transfer to a plate.
  4. Reduce heat to 350°F.
  5. In an oiled 8 by 10-inch pan, place a layer of eggplant slices. Spread with 1/4 cup of tomato sauce and both cheeses. Repeat the layering, finishing with the cheese. 
  6. Sprinkle the toasted bread crumbs over the top of the eggplant.
  7. Bake uncovered until the cheese melts and the tops turn light brown, about 15 minutes. Serve.
