Ingredients
  • 4 c. organic baby spinach
  • 2 tsp. organic extra virgin olive oil
  • 1 clove organic garlic, finely chopped
  • 16 organic cherry tomatoes
  • 1 pinch Celtic sea salt
Instructions
  1. Add oil and heat until shimmering.
  2. Add tomatoes and cook, stirring, until slightly softened.
  3. Stir in garlic and top with spinach. Cover.
  4. Remove pan from heat and allow to stand covered 1 minute.
  5. Stir spinach and tomatoes, drizzle with olive oil and sprinkle with salt. Serve.
