White Bean Soup with Rosemary & Sun-Dried Tomatoes (Vegetarian) Recipe

  • 4 c. Imagine Organic Low Sodium Vegetable Broth
  • 6 cloves organic garlic, minced
  • 1 medium organic onion, diced
  • 2 Tbsp. organic extra virgin olive oil
  • ½ c. organic sun-dried tomatoes
  • 1 16-oz can organic great northern beans, drained and rinsed
  • 1 Tbsp. dried organic rosemary
  1. Add oil to a large pot over medium heat.
  2. Add onion and sauté 3 minutes; add garlic and sauté 1 minute longer.
  3. Add broth, rosemary, beans and tomatoes.
  4. Season with salt and pepper and simmer 15 minutes.
  5. Serve.
