  • 1 medium organic yellow onion, chopped
  • 1 medium organic red bell pepper, seeded and chopped
  • 6 large organic egg whites
  • 3 large organic eggs
  • ¼ tsp. sea salt
  • 1 c. chopped organic tomatoes, seeded and chopped
  • 1 Tbsp. fresh basil, chopped
  • 1 medium organic zucchini, chopped
  • 1 oz. organic part skim mozzarella cheese
  • 3 c. organic spinach
  • ¼ tsp. freshly ground black pepper
  • 2 tsp. extra virgin olive oil
  1. Preheat broiler.
  2. Heat olive oil in 10-inch-diameter safe nonstick skillet over medium-high heat.
  3. Add onion and bell pepper; saute until golden, about 8 minutes.
  4. Add zucchini; saute until tender, about 5 minutes.
  5. Add spinach; stir until wilted, about 1 minute.
  6. Whisk eggs, egg whites, and pepper in medium bowl to blend.
  7. Pour egg mixture over hot vegetables in skillet; stirring gently to combine. Reduce heat to medium-low. Cook without stirring until eggs are set on bottom, about 5 minutes.
  8. Sprinkle mozzarella over egg mixture and then place under broiler. Broil until the cheese melts, about 2 minutes.
  9. Top with tomatoes and basil, and salt and pepper.
  10. Serve.
