Tempeh with Peas in Coconut Curry Sauce Recipe

Ingredients
  • ½ tsp. Celtic sea salt
  • ½ tsp. organic cumin
  • 1 tsp. arrowroot
  • 1 c. organic coconut milk
  • 8 oz. organic tempeh, cut into 1” cubes
  • 1 tsp. organic virgin coconut oil
  • 1 medium organic onion, diced
  • 2 tsp. organic curry powder
  • ½ c. organic peas
Instructions
  1. Steam the tempeh cubes for 10 minutes.
  2. Add the oil to a medium saucepan and heat over medium.
  3. Add the onions and cook until soft.
  4. Add the coconut milk, and stir in the curry powder, salt and cumin.
  5. Add the tempeh and peas and simmer over low heat for 1 minute to heat through.
  6. Serve.
