Slow Cooker Beef Bourguignon Recipe

Ingredients
  • 2 cloves organic garlic, minced
  • ½ tsp. thyme
  • 48 oz. grass-fed beef roast
  • 1 tsp. Celtic sea salt
  • 8 oz. organic white button mushrooms, sliced
  • 2 c. Imagine Organic Beef Flavored Broth
  • 1 medium organic carrot, sliced
  • 1 medium organic onion, sliced
  • ½ tsp. fresh ground black pepper
  • 1 Tbsp. arrowroot
  • 2 c. organic dry red wine
  • 1 Tbsp. organic tomato paste
  • 1 whole bay leaf
  • 1 slice Niman Ranch Uncured Applewood Smoked Bacon
Instructions
  1. Cook bacon in large skillet just until crisp. Remove, drain and crumble.
  2. Cut beef into 1 inch cubes. Add beef cubes to skillet and lightly brown.
  3. Place beef cubes into slow cooker.
  4. Add carrot and onion to skillet and saute 2 minutes. Season with salt and pepper. Stir in arrowroot. Add broth and mix well. Add vegetables to stoneware.
  5. Finally, add crumbled bacon, wine, tomato paste, garlic, bay leaf, onions and mushrooms to stoneware.
  6. Cover cook on High for 5 to 6 hours.
