Ingredients
  • ¼ c. organic balsamic vinegar
  • 48 oz. organic grass-fed lamb roast
  • 2 tsp. coriander
  • 2 tsp. Celtic sea salt
  • 2 tsp. fennel seed
  • 2 tsp. thyme
  • 4 medium organic squash (yellow and zucchini), sliced
  • 2 tsp. black pepper
  • 1 Tbsp. rosemary
  • ½ Tbsp. fresh mint, finely chopped
  • 1 c. sliced organic red onions
Instructions
  1. Combine salt, pepper, coriander, rosemary, mint, thyme and fennel. Rub into lamb. Add lamb and remaining ingredients to slow cooker. Drizzle the balsamic over all. Cover; cook on high for 3-4 hours.
