Ingredients
  • ½ tsp. baking soda
  • ⅓ Tbsp. Navitas Naturals Organic Yacon Syrup Navitas Naturals Yacon Syrup
  • ⅓ Tbsp. apple cider vinegar
  • 1 ½ c. ground organic almond flour
  • ¾ c. arrowroot powder
  • 4 Tbsp. organic flax seed meal
  • 1 c. organic walnuts, coarsely chopped
  • ¼ c. organic sesame seeds
  • ½ tsp. Celtic sea salt
  • 4 large organic eggs
  • ¼ c. whole organic hazelnuts, coarsely chopped
  • ¼ c. organic sunflower seeds
  • ¼ c. organic pumpkin seeds
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine almond flour, arrowroot, flax, salt and baking soda.
  3. In a larger bowl, beat eggs until frothy (about 3 minutes).
  4. Stir yacon and vinegar into eggs.
  5. Mix dry ingredients into wet. Stir in nuts and seeds.
  6. Pour batter into an oiled greased 7.5 x 3.5 loaf pan
  7. Bake for 30-35 minutes, until a toothpick inserted into center of loaf comes out clean
  8. Cool and serve.
