Raw Avocado Soup Recipe

Ingredients
  • ½ medium organic onion, chopped
  • ½ tsp. cayenne pepper
  • 2 medium organic avocados, mashed
  • ½ medium organic cucumber, diced
  • 1 whole organic lemon, zest and juice
  • 3 c. spring or filtered water
  • 1 Tbsp. Eden Foods Organic Genmai (Brown Rice) Miso
Instructions
  1. Combine avocados, cucumbers, onion, lemon juice, lemon zest and miso in a blender or food processor.
  2. Puree.
  3. Add water, one cup at a time, until creamy.
  4. Season with salt and pepper.
  5. Spoon into bowls, sprinkle with cayenne.
  6. Serve.
