Raspberry Bavarois

Ingredients
  • 1 tsp. organic vanilla extract
  • 1 c. organic, grass-fed milk
  • ½ c. organic whipped cream
  • 2 c. organic raspberries
  • 1 Tbsp. organic arrowroot
  • 3 large organic egg yolks
  • ½ c. organic erythritol
Instructions
  1. First, make the raspberry puree. Add the raspberries to a small saucepan over medium heat with ½ tsp. vanilla. Heat just until warmed through and soft (about 10 minutes). Press through a fine-meshed sieve to collect the seeds. This will leave larger pieces of raspberry throughout your dessert. You may also blend the sieved raspberries further in a blender or food processor for a smoother, more uniform result, if desired. Set the puree aside. Next, gently boil the milk. Remove from heat, add beaten egg yolks and erythritol and stir until well combined. Whisk in arrowroot, remaining vanilla and raspberry puree. Cool to room temperature, then stir in whipped cream. Pour into molds (try glass ramekins) and chill. Serve in the ramekins or unmold by setting ramekins in warm water and inverting onto a serving dish.
