Ingredients
  • 4 -8oz. breasts organic chicken, cut into 1-inch strips
  • 1 c. organic chiles in adobo sauce
  • 1 ½ c. chopped organic green peppers
  • ½ c. organic celery, chopped
  • ¼ c. chopped organic sweet onion
  • 2 cloves organic garlic, minced
  • 1 Tbsp. fresh basil
  • 1 Tbsp. fresh parsley
  • ¼ tsp. sea salt
  • ¼ tsp. crushed red pepper
  • 1 oz. can Eden Foods Organic Diced Tomatoes with Green Chilies (14.5 oz)
Instructions
  1. Spray a deep skillet with nonstick spray coating and heat over medium high heat.
  2. Add chicken to hot skillet, stirring, for 3-5 minutes, or until no longer pink.
  3. Reduce heat. Add tomatoes and their juice, chilis with adobo sauce, green pepper, celery, onion, garlic, basil, parsley, crushed red pepper, and salt. Bring to a boil. Reduce heat and simmer, covered, for 10 minutes.
  4. Serve.
