Portabella Pizza

Portabella Pizza Recipe

Serves: 4
  • 4 whole organic portabella mushrooms, cleaned
  • 6 oz. organic mozzarella cheese
  • 1 tsp. extra virgin olive oil
  • ¼ tsp. fresh ground black pepper (to taste)
  • 1 clove organic garlic, minced
  • 10 leaves fresh basil
  • 2 medium organic tomatoes, roasted or grilled
  • ¼ tsp. Celtic sea salt
  1. Place tomatoes slices on an oiled baking sheet and broil for 3-4 minutes.
  2. Remove from oven and set aside to cool.
  3. Combine the oil and garlic in a small bowl and rub the mushroom caps on all sides with the mixture.
  4. Remove tomatoes from baking sheet.
  5. Place the caps, topside down/gills up, on the oiled baking sheet.
  6. Season with the salt and pepper.
  7. Arrange the cheese, basil, and tomato slices alternately in a circle on top of the mushrooms.
  8. Bake at 450 F until the cheese melts, about 3 minutes.
