Ingredients
  • 2 cloves organic garlic, minced
  • ¼ c. organic cilantro leaves
  • ¾ c. chunky organic Valencia peanut butter
  • 3 Tbsp. fresh lime juice
  • ½ tsp. freshly ground pepper
  • 1 whole organic chile pepper, seeded and minced
  • 1 medium organic tomato, peeled, seeded and coarsely choppe
  • 2 tbsp. organic scallions, finely chopped
  • 3 Tbsp. Asian fish sauce (nuoc mam)
  • ½ c. organic low-sodium chicken broth
  • 2.5 Tbsp. erythritol
  • 1 stalks fresh lemongrass, tender inner bulb, minced
Instructions
  1. In a food processor or magic bullet, combine the tomato, cilantro, garlic, scallions, chile and lemongrass; pulse until finely chopped.
  2. Add the peanut butter, stock, fish sauce, lime juice, erythritol and pepper and process until smooth.
  3. Transfer to a bowl and serve.
