Paleo Coconut Shrimp (Low Carb, Gluten Free)

Paleo Coconut Shrimp (Low Carb, Gluten Free) Recipe

Ingredients
  • ½ tsp. ground red pepper
  • 10 drops liquid stevia
  • 8 Tbsp. Bob’s Red Mill Organic Coconut Flour
  • 1 c. organic unsweetened shredded coconut
  • 1 c. organic egg whites
  • 2 pounds large wild shrimp, deveined and shelled
  • 1 Tbsp. fresh lime juice
Instructions
  1. Preheat oven to 425 degrees F. Grease a baking sheet.
  2. In a small bowl, combine coconut flour, red pepper and salt.
  3. In another small bowl, whisk stevia and lime juice. Slowly add egg whites, continuing to stir.
  4. Place shredded coconut on a plate.
  5. Take each shrimp and dip first into flour mixture, then into egg mixture, and finally roll into shredded coconut.
  6. Place each shrimp on greased baking sheet.
  7. Bake 10-15 minutes or until shrimp is pink and coconut is lightly toasted.
