  • 4 medium organic sweet potatoes, peeled and cut into cubes
  • 1 whole organic orange, juice and zest
  • 2 Tbsp. organic virgin coconut oil
  1. Place sweet potatoes in a large saucepan and cover with filtered or spring water.
  2. Bring to a boil.
  3. Reduce heat, cover, and simmer 10 to 12 minutes or until tender.
  4. Drain.
  5. Add the zest, juice, and coconut oil.
  6. Beat with an electric mixer until light and fluffy.
