Mediterranean Spinach Pie

Mediterranean Spinach Pie Recipe

  • 2 cloves organic garlic, crushed
  • 1 Tbsp. organic butter (preferably grass-fed)
  • 8 oz. organic part skim mozzarella cheese, grated
  • 1 medium organic onion, chopped
  • 3 large organic omega-3 eggs
  • 1 package (10oz) frozen organic spinach, thawed, squeezed dry
  • 15 oz. organic part skim ricotta cheese
  • 1 Serving Wholly Wholesome Organic Whole Wheat Pie Crust
  • ¼ tsp. fresh ground black pepper (to taste)
  • ¼ tsp. organic nutmeg
  • 1 oz. organic parmesan cheese
  1. Preheat oven to 350°F.
  2. Melt butter in heavy large skillet over medium heat.
  3. Add onion and sauté until tender, about 8 minutes. Mix in spinach, salt, pepper, garlic and nutmeg. Sauté until all liquid from spinach evaporates, about 3 minutes.
  4. Combine ricotta, mozzarella and Parmesan cheeses in large bowl. Mix in eggs.
  5. Add spinach mixture; blend well. Spoon cheese mixture into pie crust.
  6. Bake until filling is set in center and brown on top, about 40 minutes.
  7. Let stand 10 minutes to set. Cut pie into wedges. Serve.
