Lentil Feta Wraps

Lentil Feta Wraps Recipe

Ingredients
  • ½ c. chopped organic tomatoes
  • 2 whole SHALLOTS,RAW organic shallots, finely chopped
  • ¼ c. dry organic white wine
  • ¼ c. organic kalamata olives, chopped
  • 2 cloves organic garlic, minced
  • 1 c. organic lentils, cooked
  • 1 Tbsp. organic extra virgin avocado oil
  • 2 Servings Food For Life Brown Rice Tortillas
  • 2 oz. organic feta cheese, crumbled
  • 1 c. fresh organic button mushrooms, sliced
Instructions
  1. Preheat oven to 250 degrees F. Slice tortillas in half and place on a baking sheet. Warm in the oven about 10 minutes, until soft.
  2. Meanwhile, heat the olive oil in a saucepan over medium heat. Add the garlic, shallots, and mushrooms, saute 5 minutes, until golden and fragrant.
  3. Pour in the wine, and scrape up any browned bits from the bottom of the saucepan.
  4. Mix in the lentils, and cook 2 minutes, just until heated through.
  5. Fill each tortilla half with a portion of the lentil mixture, and fold or roll.
  6. Top with feta cheese, olives, and tomatoes.
  7. Serve.
