Lemongrass Seafood Curry

Lemongrass Seafood Curry Recipe

Ingredients
  • ¼ c. organic coconut milk
  • 4 Tbsp. fresh lemongrass, cut into 1 inch pieces
  • 1 medium organic red bell pepper, thinly sliced
  • 8 oz. mahi mahi
  • 8 oz. sea scallops
  • 2 Tbsp. organic green curry paste
  • ½ c. fresh basil leaves
  • 8 oz. wild shrimp, peeled
  • 2 Tbsp. organic coconut oil
  • 2 Tbsp. fish sauce
Instructions
  1. Mix together coconut milk and green curry paste and set aside.
  2. Heat oil in a large, safe skillet over medium high heat.
  3. Add the shrimp, scallops and fish and sauté for 3-4 minutes.
  4. Add bell pepper strips and toss for 30 seconds.
  5. Add all remaining ingredients, cover, and simmer for 3–4 minutes.
  6. Remove lemongrass pieces and serve.
