  • ½ tsp. organic turmeric
  • ½ tsp. organic cayenne pepper
  • ½ tsp. cumin seed
  • 1 16-oz can organic chickpeas, drained and rinsed
  • 5 cloves organic garlic, chopped
  • 2 large organic egg whites
  • 2 tsp. organic lemon zest
  • 1 whole organic lemon, sliced for garnish (optional)
  • ⅓ c. fresh organic lemon juice
  • 2 oz. fresh organic baby spinach
  • 4 Servings Imagine Organic Low Sodium Vegetable Broth
  1. Combine broth, garbanzo beans, garlic, cumin, and turmeric in a large pot.
  2. Bring to a boil, reduce heat, and simmer for 15 minutes.
  3. Whisk eggs, lemon juice, and zest in bowl. Whisk 2 cups of hot soup into the egg white mixture. Add back to pot along with baby spinach, stirring over medium-low heat for 5 minutes
  4. Add cayenne, ladle into bowls, float lemon slices atop, and serve.
