Herbed Quinoa

Ingredients
  • 1 c. organic quinoa, rinsed
  • ½ medium organic red onion, diced
  • ¼ tsp. Celtic sea salt
  • 1 tsp. organic lemon zest
  • ½ tsp. organic garlic powder
  • 1 Tbsp. organic extra virgin olive oil
  • 2 Tbsp. organic lemon juice
  • 2 tsp. dried organic oregano
  • 2 tsp. dried organic basil
Instructions
  1. Rinse quinoa according to package instructions.
  2. In a medium saucepan, bring water to a boil. Add quinoa, cover, reduce heat to low and simmer until water is absorbed - about 15 to 20 minutes.
  3. Remove from heat.
  4. Stir in herbs, diced onion, garlic powder, lemon juice and olive oil.
  5. Serve.
