Halibut Chowder Recipe

Ingredients
  • ½ c. chopped organic celery
  • 3 Tbsp. organic, grass-fed butter
  • ¾ tsp. Celtic sea salt
  • 3 c. organic chicken broth
  • 4 oz. organic cheddar cheese
  • 2 c. organic grass-fed whole milk
  • 24 oz. wild Alaskan halibut
  • ½ c. chopped organic onion
  • ½ c. chopped organic carrots
  • ½ tsp. black pepper
  • 1 Tbsp. arrowroot
  • 1 Tbsp. minced parsley
  • 1 medium organic green pepper, finely chopped
Instructions
  1. Remove skin and bones from halibut; cut into bite-sized pieces.
  2. Saute vegetables over medium heat in 1 tablespoon butter.
  3. Add halibut, chicken broth, salt and pepper.
  4. Simmer, covered for 5 minutes.
  5. Add milk and heat gently.
  6. Combine remaining butter with arrowroot and add to chowder.
  7. Cook and stir until slightly thickened.
  8. Add cheese; cook and stir over low heat until cheese melts.
  9. Sprinkle with parsley and serve.
